My children love peanut butter balls.  They also love to cook and experiment in the kitchen.  This recipe is easy enough that they can do it on their own. 

Below is the recipe, quick and easy to make as well as a video to show my children making them too.

Yummy Peanut Butter Balls

1 7-oz container of Puffed Marshmallow Cream

2 cups of creamy peanut butter (can also use crunchy kind)

1 cup of chocolate chips

Sugar

Mix well and form into balls.  Once the balls are formed roll them in sugar and refrigerate for at least 1 hour.  Then eat and enjoy!

For those of you that really know me, will know that I am not a typical ‘Southern Girl’.  I am considered a transplant because although I was born and raised up North…I have lived in the South for 19 years.  My husband is Southern so I am now legitimately a Southern Girl, y’all hear!

So, my husband makes the best Southern Collard Greens and I wanted to share the recipe with you.

Southern Collard Greens

Serves 6 to 8

4 pounds young collard greens (about 4 bunches)

3 tbsp olive oil

1 onion, julienned

Well, this is what we had for dinner on Tuesday evening and it was very easy to make and delicious too. I actually had to make two versions. I made one with the actual burger and bacon for the meat lovers in my house and then a I made a version with Boca crumbles and fake bacon for my son and myself. I must say that both versions looked very tasty and very filling.

This actually was a recipe that takes about 20 minutes to prepare so it is great for the busy moms that need to whip up something quick for their hungry family members. This is a great alternative to the usual cheeseburger, this adds bacon and pasta for a yummy treat.

So, since I posted my 2 week menu, I have had several requests for this particular recipe. I decided to share with my readers. It is not difficult to make and very, very tasty. Also remember that I have a large family,so the amounts can be halved for smaller families, but this meal makes great left-overs too. So here goes:
