My 2 Week Menu
Another year is here, and I have my menu listed for the next 2 weeks.
Although it took over 3 hours to clip coupons, organize my coupon book and determine my grocery list..my menu is finally done!!
I’m very excited because we are a cooking family and the kids love to be involved in the menu planning. So, without further ado here is my 2 week menu:
Week 1
Monday – Big Basil Burgers w/baked beans and salad
Tuesday – Shrimp Gumbo w/white rice
Wednesday – Twice Baked Chicken w/red roasted potatoes and salad
My Two Week Menu – incl. Thanksgiving
This 2 week menu includes my Thanksgiving meal as well. My last menu was a bit disrupted because of family coming into town, but at least I have the ingredients and can add to my existing menu. No worries, if you have the food you can always use it another day, it never goes to waste in my house!
So here’s my 2 week menu:
Week 1
Monday: Stewed Chicken (crock pot) with wild rice
Tuesday: Pasta Verde w/salad and garlic bread
Wednesday: Picadillo w/white rice
Chickpea Pasta Meal
This is a meal I started making when I first got married. I wanted to make a pasta meal but didn’t have sauce or mozzarella. So I experimented with cottage cheese, yes…cottage cheese and everyone loved it. Not only is it quick and easy but it’s healthy too, my kind of meal. I am sharing my recipe with you below and hope you enjoy it too:)
Chickpea Pasta Meal
Serves 6
1 lb shaped pasta
1 medium onion, finely chopped
2 cloves of garlic, minced
Olive oil
2-cans of chick peas, drained and rinsed
My 2-Week Menu
Wow!! This was difficult to do today. However, I managed to pick 2 weeks worth of dinners for my family.
Each week we pick new favorites and rotate them in the menu. I also go through my coupons and check out the circulars before deciding on my final menu. So here’s my menu for the next 2 weeks, if there are any that may entice you, let me know and I will post the recipe along with photos.
Week 1
Monday – Shrimp Velveeta Pasta Dish (Cowboy Wife’s Recipe)
Tuesday – Lemon Chicken Casserole
My Spinach Lasagna Roll-Ups
This meal was a hit in our home! My kiddos actually ate the spinach and didn’t try to pick it out! So, moms if you have picky eaters, this is a meal they will enjoy. The roll-ups are fun to make and your kiddos can get involved as well. This is a great meal that will not take all day to make. So here’s the recipe and enjoy..
Spinach Lasagna Roll-Ups
Serves 6
12 lasagna noodles
2 eggs, lightly beaten
2 1/2 cups ricotta cheese
2 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
