Many of you may not be able to pronounce much less know what this recipe is for; so let me explain. Being a Latina, I love to cook all sorts of ethnic foods and especially Latin cuisine. One of the main staples in Latin food is Recaito which is a base used in foods such as beans, soups, yellow rice, stews, etc.
From the picture you will notice that it simple consists of cilantro, garlic, green peppers, onions, any other type of sweeter pepper {your choice}.
All these items are then placed in a blender and mixed into a think puree, be sure to add some water to help with the blending process.
The aroma and taste of this base is fantastic and essential in Latin cooking. Once you have pureed the ingredients place in containers. I also keep a container in the freezer and one in the refrigerator. When cooking beans, stews, chili, or yellow rice, start with the base and a bit of olive oil. Let the base sizzle a bit add crushed or tomato sauce and proceed with your recipe.
My family loves this very important ingredient and its also a great way to get your children to eat vegetables they normally wouldn’t eat. Enjoy!!
