This is a meal I started making when I first got married. I wanted to make a pasta meal but didn’t have sauce or mozzarella. So I experimented with cottage cheese, yes…cottage cheese and everyone loved it. Not only is it quick and easy but it’s healthy too, my kind of meal. I am sharing my recipe with you below and hope you enjoy it too:)
Chickpea Pasta Meal
Serves 6
1 lb shaped pasta
1 medium onion, finely chopped
2 cloves of garlic, minced
Olive oil
2-cans of chick peas, drained and rinsed

Not sure if you are aware that I have 5 children which I home school. You may be wondering how I manage to home school all of them considering they are all different ages and in different learning levels. Well quite simply we use the rotation system on a daily basis. Today was one of those days.
When mom has her hands full it is wonderful to see siblings helping each other out. The best lesson is not only for the one getting help but for the one doing the helping. Today I witnessed a beautiful site. One of my older girls was helping her younger sister with the metric system. After listening to her explanation, I don’t know if I could have explained it better.

I had to share with you my first CVS adventure. Now, I’ve been to CVS in the past but never on a mission like I was today. Today I was determined to use my coupons wisely and accumulate Extra Bucks!
My first task was determining what I wanted to purchase and if I truly needed it. I didn’t want to just purchase it because I had a coupon, I truly wanted to either stockpile or use it now. So, I pulled out my CVS circular from the Sunday paper and went to work. After several hours, I realized I needed help. I logged into my account on The Grocery Game, which is fantastic! If you are not aware of The Grocery Game, you must check it out. It is a great way to save money and she actually supplies a list with items to purchase with coupons and savings. It is a definite time saver.

Wow!! This was difficult to do today. However, I managed to pick 2 weeks worth of dinners for my family.
Each week we pick new favorites and rotate them in the menu. I also go through my coupons and check out the circulars before deciding on my final menu. So here’s my menu for the next 2 weeks, if there are any that may entice you, let me know and I will post the recipe along with photos.

Another one of my family favorites is Smothered Pork Chops. It’s not as difficult as it may sound. We like to have it with another family favorite corn on the cob. Enjoy!
Smothered Pork Chops
Serves 4 (we double all the ingredients for our family)
1 cup all-purpose flour
2 tbsp onion powder
2 tbsp garlic powder
1 tsp cayenne
1 tsp salt
1/2 tsp freshly ground pepper
4 pork chops (bone-in)
1/4 cup olive oil
1 cup chicken broth
1/2 cup butter milk ( I use regular milk, for thinner gravy)

Many of you may know that I home school my children and one of the most important lessons that they are learning is how to save money. With today’s economy it is wise to save money and it can be done several ways. One of the ways I have taught my children is by clipping coupons. We love getting the Sunday paper and sit in my office together and clip coupons. I have taught them how to categorize them too.

This meal was a hit in our home! My kiddos actually ate the spinach and didn’t try to pick it out! So, moms if you have picky eaters, this is a meal they will enjoy. 12 lasagna noodles
2 eggs, lightly beaten

I was so excited when I was given the opportunity to review this new video game. You may be familiar with the very popular game called Dance Revolution, well this game is similar but it has Christian music and lyrics instead.
