Wow!! This was difficult to do today. However, I managed to pick 2 weeks worth of dinners for my family.
Each week we pick new favorites and rotate them in the menu. I also go through my coupons and check out the circulars before deciding on my final menu. So here’s my menu for the next 2 weeks, if there are any that may entice you, let me know and I will post the recipe along with photos.
Week 1
Monday – Shrimp Velveeta Pasta Dish (Cowboy Wife’s Recipe)
Tuesday – Lemon Chicken Casserole
Wednesday – Chickpea, Cottage Cheese Pasta Dish
Thursday – Salmon and Wild Rice, with biscuits
Friday – Yellow Rice with Chicken, Red Beans and veggies
Saturday – Baked Rigatoni, garlic bread sticks and salad
Sunday – Grilled Burgers, Potato Salad, and Baked Beans

Monday – Homemade Pizza Night
Tuesday – Vegetarian Chili w/noodles and Corn Bread Casserole
Wednesday – Pork Loin w/Sour Cream Mashed Potatoes and veggies
Thursday – Take-Out Thursday
Friday – Taco Salad
Saturday – Chicken Parmesan, pasta and garlic bread
Sunday – Mama’s Jambalya

It takes me approximately 2 hours to determine the menu, grocery list and match the coupons and determine which stores we would tackle. Then I give my hubby a list and I take a list and within 2 hours we are home and packing away our groceries.
Now will you take the challenge and shop for 2 weeks at a time? It is difficult at first but once you get used to it you would not have it any other way. With a family of 7 we always have to have our pantry stocked and doing this twice a month is wise and a great money saving tip.
