I love to cook, but lately haven’t been able to enjoy it as much with all the activities that keep me running around. I guess it has a lot to with having 5 children and having a busy life in general. So, I have taken to writing down my menus for the week along with a shopping list. My wonderful husband helps with the grocery shopping and cooks 2 nights of the week. So, of course those days I have to pick meals that are not as complicated and quick. So, this is what I have planned for the week.
Monday
- Mini-Pizzas (lunch)
- Bow Tie Lemon Chicken w/garlic breadsticks and salad (dinner)
Tuesday
- Chicken Strips and Fries (lunch)
- Saute Shrimp over white rice (dinner)
Wednesday
- Grilled Cheese Sandwiches w/fresh fruit (lunch)
- Pork Loin, Wild Rice, Veggies and Dinner rolls (dinner)
Thursday
- Quesadillas with leftover Pork (lunch)
- Take-Out Thursday
Friday
- Fried Rice w/leftover rice (lunch)
- Green and Red Pasta w/salad and garlic bread (dinner)
Saturday
- Grilled burgers, coleslaw, baked beans (dinner)
Sunday
- Homemade Mac-n-Cheese, Grilled Chicken and veggies
Now that my menu is done, it’s time to clip some coupons.

These meals sound easy and yum! Thanks for sharing. I like to cook, too, but way-too-often find takeout is easier.
