Chickpea Pasta Meal

This is a meal I started making when I first got married.  I wanted to make a pasta meal but didn’t have sauce or mozzarella.  So I experimented with cottage cheese, yes…cottage cheese and everyone loved it.  Not only is it quick and easy but it’s healthy too, my kind of meal.  I am sharing my recipe with you below and hope you enjoy it too:)

Chickpea Pasta Meal

Serves 6

1 lb shaped pasta

1 medium onion, finely chopped

2 cloves of garlic, minced

Olive oil

2-cans of chick peas, drained and rinsed

1- 12 oz container of large curd cottage cheese

2 tbsp oregano

salt and pepper

Grated Parmesan

Lemon for garnish

1.  Cook pasta following container package.

2.  Meanwhile in a saute pan, add olive oil heat up and cook the onion until transparent.  Add the garlic and saute together.

3.  Add the chick peas and add oregano, salt and pepper to taste.  Cook until well heated.

4.  Drain the pasta and place back in pot.  Add the chick pea mixture along with cottage cheese and mix well.

5.  Add parmesan cheese to taste, garnish with lemon. Serve warm…and enjoy!
