Spanish Beans

Oh yes, beans can be ethnic, didn’t you know that? Well, at least in my home they are.  I can recall my mom making beans from scratch, not the canned variety.  Mmmm, they were yummy and I made sure to watch intently so I could replicate her recipe for my family someday.

So below I share my recipes for Spanish Red Beans.  I will share the recipe for ‘recaito’ in another post.

Spanish Red Beans


Ingredients:

1 package of dried red beans

2 tbsp recaito

2 tbsp olive oil

1 small can of crushed tomatoes

2 envelopes of Sazon (spanish seasoning)

Salt & Pepper to taste

Directions:

Soak the dried beans in pot for 4 hours or more.

Rinse the beans, keep in same pot and add fresh water.

Boil the beans in pot for approximately 2.5 hours, until tender (will notice beans start to split)

In a separate saucepan add olive oil and recaito and simmer.

Add the tomatoes to the saucepan to mix well.

Take the mixture from the saucepan and add to the beans and water.

Bring back to heat, and bring to a boil, then lower to simmer.

Add the Sazon, salt and pepper.

Allow the beans to simmer for another 3o minutes then enjoy!
