With the summer heat upon us, I will be sharing delicious, yet quick meals to serve to your family in 20 minutes or less.

Ingredients:

1/4 cup of non-fat yogurt

1 tbsp of white wine vinegar

2 Seedless cucumbers, thinly sliced on the diagonal

2-3 Vine-ripened tomatoes, finely chopped

1/4 cup fresh flat-leaf parsley

Kosher salt and black pepper

Old Bay Seasonings

4 small salmon steaks

Directions:

In a large bowl, whisk together the yogurt, vinegar and 1/4 tsp of salt and pepper. Add the cucumbers and tomatoes and toss to combine.

Heat grill to medium-high.  Season salmon with 1/2 tsp of salt and 1/4 tsp of pepper and sprinkle some Old Bay Seasoning on each salmon steak.

Grill until opaque throughout, 5 to 6 minutes per side.  Serve with salad and enjoy!
