My Spinach Lasagna Roll-Ups
Meal Ideas — By Dr. Mommy on November 5, 2008 at 8:35 amThis meal was a hit in our home! My kiddos actually ate the spinach and didn’t try to pick it out! So, moms if you have picky eaters, this is a meal they will enjoy. The roll-ups are fun to make and your kiddos can get involved as well. This is a great meal that will not take all day to make. So here’s the recipe and enjoy..
Spinach Lasagna Roll-Ups
Serves 6
12 lasagna noodles
2 eggs, lightly beaten
2 1/2 cups ricotta cheese
2 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
1/4 tsp salt
1/4 tsp pepper
1/4 tsp ground nutmeg
1 jar of meatless spaghetti sauce
—————————–
Preheat oven to 375 degrees
Cook Lasagna noodles according to package directions.
Meanwhile in a large bowl, combine the cheeses, eggs, spinach, salt, pepper and nutmeg. Mix well.
Drain the noodles.
Spread 1/3 cup of the cheese mixture over each noodle, and carefully roll up. (Kids loved doing this part)
Pour 1 cup spaghetti sauce into an ungreased 13 x 9 x 2 baking dish.
Place the rolls seam side down over the sauce, top with remaining sauce.
Bake uncovered for 20-25 minutes or until heated. Enjoy!
The Chronicles continue….

YUM! Now I know I what I am making tonight!
YUMMY, Dr. Mommy! I’m really looking forward to making this quick and easy recipe. THANKS for sharing
These look so good! You are quickly becoming my favorite person ever.
That’s definitely a recipe I’m going to try. We both love spinach but I’m not supposed to have much due to medication – but a wee bit would probably work.
This looks great! Hopefully the kids will like it too!
