My Tamale Bean Pie Recipe
Meal Ideas — By Dr. Mommy on October 15, 2008 at 2:00 pmSo, since I posted my 2 week menu, I have had several requests for this particular recipe. I decided to share with my readers. It is not difficult to make and very, very tasty. Also remember that I have a large family,so the amounts can be halved for smaller families, but this meal makes great left-overs too. So here goes:
Tamale Bean Pie
For the Filling
1 to 2 tbs of corn oil
1 medium sized onion, chopped
2-3 cloves of garlic, minced
1/2 cup of chopped green pepper
1 tbsp of chili powder
1 large can of crushed tomatoes
1 can (15oz) red, kidney beans (drained)
1 can (15oz) corn (drained)
1 can (15oz) garbanzo beans (drained) -also called chick peas
1 pound of boca crumbles or ground beef
salt and pepper to taste

1. Heat oil in large skillet or saucepan; saute onion and garlic over low heat until golden.
2. Add remaining ingredients and simmer uncovered, until slightly thickened, 10-15 minutes, stirring occasionally.
3. Reduced heat and let simmer as you make the crust.
For the Crust
1 1/2 cup of cornmeal
4 cups of milk
4 tsp corn oil
1 tsp of salt
4 eggs, lightly beaten

1. Mix together cornmeal with 1 cup milk and corn oil; set aside.
2. Heat remaining milk and salt until mixture begins to simmer. Slowly add cornmeal milk mixture, stirring; simmer, stirring continuously, until think and bubbly, about 5 minutes.
3. Remove from heat; quickly stir in eggs until mixture is well blended.
For the Topping
1/2 cup grated Cheddar Cheese

1. To assemble casserole, spoon half the crust mixture into bottom of greased 9 or 10 inch rectangular or square baking dish.
2. Cover with all the filling.
3. Cover with remaining crust mixture and sprinkle top evenly with cheese.
4. Bake in preheated 375 degree oven for 35 minutes. ( the crust will stay soft)
Yummy dish that can be made ahead of time and just placed in oven in time to bake and serve piping hot. Delicious and very inexpensive:)
