Corny Chicken Wraps

This is now one of my family’s favorite meals and it is very easy to make.  Now remember I used chicken from the evening before, but you can easily use chicken breast, or steak strips or fake meat for vegetarians.

Corny Chicken Wraps

Makes 4 servings (we double it because of our large family)

2 cups cubed chicken breast (or any meat you choose)

1 can whole kernel corn, drained

1 cup salsa

1 cup shredded cheddar cheese

8 flour tortillas, warmed

In a large saucepan, combine the chicken, corn and salsa.  Cook over medium heat until heated through.

Sprinkly cheese over tortillas.  Place about 1/2 cup chicken mixture down the center of each tortilla; roll up and secure with toothpicks.

Enjoy!  Your family will surely love these, but you will love them even more, because they are very easy to make.

    Yum! This is one of our family’s fave meals too. Fast and healthy – can’t beat that. We add black beans sometimes and go the even faster route with pre-seasoned fajita meat from Sam’s Club. Thanks for this post – just might make this tonite!
