Bacon Cheeseburger Pasta – Recipe

Well, this is what we had for dinner on Tuesday evening and it was very easy to make and delicious too. I actually had to make two versions. I made one with the actual burger and bacon for the meat lovers in my house and then a I made a version with Boca crumbles and fake bacon for my son and myself. I must say that both versions looked very tasty and very filling.

This actually was a recipe that takes about 20 minutes to prepare so it is great for the busy moms that need to whip up something quick for their hungry family members. This is a great alternative to the usual cheeseburger, this adds bacon and pasta for a yummy treat.

Bacon Cheeseburger Pasta

Serves 4-6

8oz uncooked shaped pasta (can use spiral, penne, bowtie, your choice)

1 pound ground beef (can also use ground turkey or Boca crumbles)

6 bacon strips, diced

1 can condensed tomato soup, undiluted

1 cup shredded cheddar cheese (can us the low fat version)

Barbecue Sauce (optional)

Cook pasta according to package directions.

Meanwhile in a skillet brown your beef over medium heat until no longer pink; drain and set aside.

In the same skillet, cook the bacon until crisp. Place on dish with paper towel after cooking.

Drain pasta; add to skillet. Stir in the soup, beef and bacon and heat through. (I also added barbecue sauce at this point)

Place mixture in a casserole dish and sprinkle with cheese. Place in broiler until cheese is melted.

Serve with side salad and you have a delicious and quick meal for your family. Enjoy!
